Paleo granola is fantastic as a breakfast or snack. It’s really a choose your own adventure when it comes to the nuts, seeds and spices, which means there’s nuttin’ granola about it. Being free of gluten, grains, and refined sugar, it’s perfect for paleo and vegan diets.

What’s in paleo granola? 

You can mix and match any combination of nuts and seeds based on your preferences. 

We like to use almonds and pecans as our base, and then mix in a variety of other nuts and seeds to give it some extra pizzazz and crunch. Such as: 

  • Walnuts
  • Pumpkin seeds
  • Sunflower seeds
  • Sesame seeds
  • Flax seeds

What to eat with paleo granola

They’re super versatile and can be mixed in with a variety of foods or munched on their own! They pair well with: 

  • Nut milk
  • Yogurt
  • Hot oatmeal
  • Chia pudding

  • Closely monitor your paleo granola when you get to the 15 minute mark. Nuts and seeds burn easily (we’ve had to throw away one batch when recipe testing). Nobody wants burned nuts!
  • You can also use slivered almonds instead of sliced almonds, but if you’re eating your granola with milk, the raw slivered almonds have more jagged edges and aren’t eating friendly (for children or adults). 
  • It’s super easy to mix in or substitute any other types of nuts, seeds, mix-ins, or spices for ones you prefer more. Some ideas to get you going: chia seeds, hemp hearts, cashews, black sesame seeds, coconut flakes, chocolate chips, cacao nibs, raisins, dried blueberries, goji berries, dried apricots, dates, cranberries, pumpkin spice, nutmeg, and many more.

FAQ

How long does granola last?  

Stored in an air-tight container, granola can last for up to 1 month at room temperature. Or it can last for several months in the fridge or freezer. 

Is paleo granola healthy? 

Yes, our version is packed with heart-healthy, high protein, and omega-3 filled nuts and seeds! It does include non-refined sugar (honey or maple syrup), but you can always use less, omit it altogether, or even sub with dried fruit or cacao nibs instead.

Easy Paleo Granola {Grain-free, Gluten-free, Vegan}

A fantastic choose your own adventure paleo granola when it comes to the nuts, seeds, and spices. There’s nuttin’ granola about this sweet breakfast or snack that's free of gluten, grains, and refined sugar.

Ingredients
  

Dry Ingredients

  • 1 cup sliced almonds
  • 1 cup chopped pecans
  • 1/4 cup chopped walnuts
  • 1/4 cup pumpkin seeds
  • 2 tbsp sunflower seeds
  • 2 tbsp sesame seeds
  • 2 tbsp flax seeds
  • 1/2 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp sea salt

Wet Ingredients

  • 1/4 cup coconut oil or avocado oil
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla

Instructions
 

  • Preheat oven to 375ºF. Line a baking sheet with parchment paper.
  • Chop your pecans and walnuts.
  • Combine the dry ingredients: In a large bowl, add all the nuts, seeds, cinnamon, ginger, and salt. Mix thoroughly.
  • Combine the wet ingredients: In a saucepan, heat the coconut oil and sweetener (maple syrup or honey), until the coconut oil is liquified and the sugar is melted. Stir in vanilla. Alternatively, use a microwave and heat for about 1 minute, until coconut oil is liquified. Stir well together. Note: If using avocado oil, simply stir in avocado oil with your sweetener (no need to heat). 
  • Pour the wet ingredients into the dry ingredients and toss to combine.
  • Spread the granola mixture evenly into a thin rectangle shape onto the baking sheet. Bake for 15-20 minutes, until granola is lightly golden. 
  • Remove from oven and cool. Note: The homemade granola will set and become crisp as it cools. Once cool, break apart into clusters and enjoy! Optional: Add in any dried fruit or chocolate. Store in an airtight container for up to 1 month (or in the freezer for months).

Notes

  • Be sure to keep an eye on your granola around the 15 minute mark to avoid it from burning. 
  • Coconut oil will result in granola that sets more firmly than avocado oil, but both taste equally great!
