Chicken chips are a delicious, high-protein snack, baked from a few nutritious ingredients including wholesome chicken breast and breadfruit flour. What are chicken chips?
Chicken chips are a healthy alternative to potato chips, made from combining chicken breast with gluten-free breadfruit flour (a nutritious superfood fruit), cassava flour, water, and spices.
There’s no oil, no frying, no sugar, no gluten, no potatoes, no grains, and no additives – just protein-packed goodness, mixed together in a food processor and baked until crispy. They’re completely paleo and keto-friendly and a delightfully healthy treat!
What’s in chicken chips?
The main ingredient in chicken chips are – you guessed it – chicken! Specifically chicken breast.
Our chicken chips recipe includes just a handful of good-for-you ingredients:
- Chicken breast
- Water
- Cassava flour
- Breadfruit flour
- Spices (salt, black pepper, white pepper, garlic powder)
All of these get mixed together in a food processor to make a smooth chicken chip paste, and then are spread into small chips that get baked for your munching pleasure.

What to eat with chicken chips
Homemade chicken chips are much more delicate and thinner than store-bought chips, so we’d recommend eating them on their own.
If you’d like, you can lightly dip (not scoop, as they’ll likely break) in any of your favorite healthy dips:
- Baba ganoush
- Guacamole
- Salsa
Or simply eat them alongside a paleo sandwich or with lunch.
Chicken chips tips
- Be sure to spread your chicken chip circles as thinly as possible, to ensure they get extra crisp! This part takes the longest but is definitely worth the crunch.
- Switch up the seasonings to your liking and create your own chicken chip flavors.
- Substitutions: You can substitute breadfruit flour with coconut flour, and cassava flour with tapioca flour.

How long can chicken chips last?
Chicken chips can be placed in your refrigerator in a tightly sealed container up to 7 days. Ensure they’re sealed so they stay crispy!
How do I get my chips to be crispier?
Traditional chicken chips like the store-bought ones are deep fried. Our healthier baked version means you’ll need to spread them very thinly to get them crispier. To ensure they don’t burn, bake them at a lower temperature (300°F or lower) for about 25 minutes, or until you’re happy with the crispy texture.
Can you substitute the chicken breast with other parts?
Unfortunately dark meat will be fattier and won’t lend the same crispy and consistent chip texture as lean chicken breast. If you’d like to substitute with a different meat, you can try turkey breast instead!
Where do you buy breadfruit flour?
In the US, the closest state that carries breadfruit flour is Hawaii. We love getting our breadfruit flour or ulu flour as it’s called in Hawaii, from Hawaiian Heritage Farms. It’s fluffy, absorbent like coconut flour, and imparts a slight tropical and banana-potato flavor to your favorite baked goods. You can buy it from their online shop here. Note: You can substitute with coconut flour instead, if you’re unable to purchase breadfruit flour.

Chicken Chips {Paleo, Gluten-Free}
Ingredients
Chicken Breast
- 6 oz chicken breast
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/8 tsp garlic powder
Chicken Chips Mixture
- 1/4 cup water
- 4 tsp cassava flour or tapioca flour
- 2 tsp breadfruit flour or coconut flour
- 1/2 tbsp agar agar or gelatin
- 1/2 tsp seasonings of your choice (1/4 black pepper, 1/8 garlic powder, 1/8 white pepper)
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (205° C). Season chicken breast with 1/4 tsp salt and 1/4 tsp black pepper and 1/8 tsp garlic powder. Bake for 20 mins.
- When done, lower oven temperature to 300°F.
- In a food processor, add cooked chicken breast and all other ingredients. Blend until you get a very smooth paste.
- Line 2 baking sheets with parchment paper. Using the back of a small spoon, spread super thin circles, about 2.5” round onto the baking sheet.
- Bake at 300°F for 25-30 minutes. Keep an eye on them to make sure they don’t burn (in case you made your circles smaller or thinner).
- Cool a few minutes, then enjoy! Store in an airtight container to preserve crispiness - they will lose their crisp if left out in the open.
Notes
- Store on counter in a tightly sealed container for 3 days, or in the fridge for 7-10 days.
- Makes about 4 cups of chips (2.5” in size, about 50 chips).
